Dear Mr Ricci,

I am writing to apply for the Chef de Partie role at The Anchor Restaurant advertised on your recruitment page. I currently run the starters section during busy service at a restaurant kitchen, preparing dishes to recipe specification and managing stock levels for my section. I also prepare mise en place ahead of service and maintain a clean, organised section throughout each shift.

On a particularly busy Friday service with a fully booked dining room, I kept starters running to time throughout the evening while also guiding a new commis chef through the section, which the head chef later mentioned had kept the whole pass moving smoothly. I hold a Level 2 food hygiene certificate and follow safety and cleanliness standards closely.

I would like to join The Anchor Restaurant because of its focus on seasonal, ingredient-led menus, which is the kind of cooking I most enjoy. I am comfortable stepping onto other sections when the kitchen is short-staffed, and flexible with evening and weekend service as required.
